Smoked some ribs today!

Smoked some pork belly today. Rubbed the night before and then hit the top with some salt and pepper before smoking it at 225 for about 7 hours. Spritzed with maple and honey mix once it hit 160. Didn’t wrap until I pulled it off to rest for an hour.

First time smoking a pork butt. 7lbs, 9 hours at 275. Used a boat around it instead of wrapping when I hit the stall. Spritzed once every hour with apple juice and honey mix. Rested for an hour before shredding.

Smoked some ribs Al Pastor today. These came out real tender and the just the right amount of sweet.

Smoked some beef ribs today. Just some salt and pepper for the rub and then hit the smoker for about 8 hours at 285. Pulled it off when it was 203 and probe went through like butter. Rested for half an hour. Real happy with the way this came out!

Finally set up and seasoned my new Traeger pro series today and then christened it by smoking some St Louis ribs. Came out super tender and juicy. I used a dry rub from Valentinas BBQ here in Austin, TX, as well as their sauce for the last 15 minutes on the smoker.
